Winemaking
Sauvignon Blanc is grown in free-draining alluvial soils, which our vines thrive in. After harvest the fruit is gently pressed, then cold settled prior to fermentation.
Fermentation was carried out in stainless steel tanks, using selected yeast strains to enhance the aromatics. The finished wine is aged for several months on yeast lees prior to bottling.
